Kale and Eggs

Kale is packed full of potassium, vitamin A, and vitamin C. When you pair it with eggs you get a high protein, high vitamin breakfast that is simply delicious! This dish is easy to prepare and does not take much time. You can also wash, cut, and dry your kale ahead of time.


Ingredients:

  • Butter (or oil, just enough so the kale doesn't stick
  • 1/2 bunch of Kale (washed and chopped)
  • Salt and Pepper
  • 2 Eggs
Procedure:

1. Melt butter in a large pot over medium heat. Although the kale reduces greatly it still takes a lot of space in the beginning.
2. Add kale, salt, and pepper and cover. Cook until tender. This will take around 10 minutes.
3. Adjust your heat to low and move your kale over to one side of your pot and crack two eggs right on top of your kale.
4. Cover and cook until done.
