Mexican Meat and Rice

This is a very simple and delicious dinner. It comes together rather quickly and is sure to please everyone.


Ingredients:
  • 1 lb. Ground Beef
  • 1 onion (I omitted the onion and it was still good)
  • 1 finely diced, green bell pepper
  • 1 10oz. can of Rotel Tomatoes, undrained
  • 1 1/2 cup of water
  • 1 cup uncooked rice
  • 1 pkg. taco seasoning
  • 1/2 tsp. salt (I omitted the salt as well)
  • Taco Fixings: lettuce, tomatoes, cheese, olives, etc.
  • Oil
Procedure:
  1. Heat oil in a large skillet over medium heat. Add in onions and peppers when hot and cook until done.
  2. Add in ground beef and cook until done. Drain.
  3. Add in can of undrained Rotel Tomatoes, water, rice, seasoning, and salt. Stir. Simmer for 15-20 minutes.
  4. Serve on warmed tortillas or over a bed of lettuce.
  5. Top with fixings of your choice.
