Ingredients:
- 1 lb. Ground Beef
- 1 onion (I omitted the onion and it was still good)
- 1 finely diced, green bell pepper
- 1 10oz. can of Rotel Tomatoes, undrained
- 1 1/2 cup of water
- 1 cup uncooked rice
- 1 pkg. taco seasoning
- 1/2 tsp. salt (I omitted the salt as well)
- Taco Fixings: lettuce, tomatoes, cheese, olives, etc.
- Oil
- Heat oil in a large skillet over medium heat. Add in onions and peppers when hot and cook until done.
- Add in ground beef and cook until done. Drain.
- Add in can of undrained Rotel Tomatoes, water, rice, seasoning, and salt. Stir. Simmer for 15-20 minutes.
- Serve on warmed tortillas or over a bed of lettuce.
- Top with fixings of your choice.
